There Are Two Different Ways To Pack Your Beans, Hot Pack And Raw Pack. Process Time Is The Same For Both Methods. Pack The Jars: Hot Pack: Boil The Beans In Water For 5 Minutes, Then Loosely Pack Them Into Hot Jars. Raw Pack: Tightly Pack The Raw, Clean Beans Into Hot Jars. All You Need Are Beans, Preferably Wide Mouth Jars, Water And Salt. Prep The Jars And Beans: Wash Your Mason Jars And Keep Them Hot. Snap Off The Ends Of The Fresh Green Beans And Cut Or Break Them Into 1 Inch To 2 Inch Pieces. Add Salt & Liquid: Add 1/2 Teaspoon Of Canning Salt To Pint Jars, Or 1 Teaspoon To Quart Jars (Optional). Cover The Beans With Boiling Water, Maintaining  1 Inch Of Headspace. Debubble And Wipe Rims: Run A Wooden Of Silicone Utensil (Like A Chopstick Or Spatula) Down The Inside Of The Jar To Remove Trapped Air Bubbles. Wipe The Jar Rims Clean With A Damp Paper Towel, Place The Lids On Top, And Screw On The Bands Until "Fingertip Tight". Prep The Canner: Place The Jars In Your Pressure Canner Containing The Amount Of Water Required By Your Specific Manufacturer. Lock The Lid In Place, Leaving The Vent Pipe Open. Vent The Canner: Turn The Heat To Medium High. Once A Steady Stream Of Steam Shoots Out Of The Vent Pipe, Set A Timer For 10 Minutes. Pressurize: After 10 Minutes Of Continuous Venting, Place The Weight Or Pressure Regulator On The Vent. Bring The Canner Up To 10 Psi. (If You Live At An Elevation Above 1,000 Feet, You Will Need To Adjust Your Pressure Or Time). Process: Once At The Correct Psi, Adjust Your Heat To Maintain That Pressure And Start Your Timer: Process Pints For 20 Minutes And Quarts For 25 Minutes. Cool Down: When Processing Is Done, Turn Off The Heat And Let The Canner Depressurize Naturally Until The Gauge Reads Exactly Zero. Never Force It To Cool Or Open It Early. Carefully Remove The Weight And Open The Lid Tilted Away From Your Face. Final Cooling: Using Jar Tongs, Carefully Remove The Jars And Set Them Upright On A Towel In A Draft Free Area. Let Them Cool For 12 To 24 Hours.
